I remember that we only added "beta" and "development build" to the extension name of Adblock Plus for Firefox and Chrome respectively, when we started to publish development builds on AMO and the CWS.
I'm not entirely sure why we did so, but I suppose that this was somehow required to publish the development builds on the extension stores. Since, the development builds for Safari aren't (and cannot be) published that way, I'm undecided whether we should add "development build" to its name.

No longer relevant as the legacy extension for Safari (this issue is about) has been discontinued.

I would agree that the build type is not shown in Safari. In Firefox the development build is reflected in the name as 'beta' and in Chrome it is reflected as 'development build'. Safari users are only able to tell if the build is a development build by the version number.
